A wine with a special and unique character. The Palo Cortado is born from special fino butts that, for several reasons, take a different path from the rest. It loses the veil of flor early on and starts the oxidative ageing. It stays in this peculiar ageing for around 25 years.
Were commend it with bull’s tail, roasted lamb, spiced partridge, hare civet and well-roasted game. It can also be tasted with appetizers, foie, puff pastry and assorted hams.
