GINÉS LIÉBANA 1937

It was obtained from the sun-drying process of Pedro Ximénez grapes ("asoleo"), yielding a must with an initial sugar content of450 g/l. It was then fortified with alcohol, thus beginning a long period of oxidative ageing in static conditions.

It is named after Ginés Liébana, the famous painter of "LosÁngeles". The 1937 vintage was selected for this wine, which comes from the old "La Noria" vineyard located on the slopes of Aguilar de la Frontera Castle. There were a total of six American oak barrels ageing statically, from which around 1.000 litres of wine were obtained and 1.200 bottles were bottled.

TASTING NOTES

· Sight: Very dark mahogany with slow movement in the glass, staining it with beautiful iodine highlights.

· Aroma: Very intense, with hints of candied orange, cinnamon, coffee and cocoa. When swirled, notes of raisins, caramel and toffee emerge.

· Taste: Sweet palate entry with an immediate acidity that refreshes the palate. Aroma of liquorice and a hint of balsamic. High persistence, a perfume in the mouth.

PAIRING

A very exclusive and select wine, perfect for enjoying at leisure. A good accompaniment to chocolate desserts, nuts, caramel, dried fruits and blue cheeses.
